Before the bullfight Romero takes off his gold-brocaded cape. He instructs his sword handler to pass it up to Brett, who's sitting at the ringside between Bill and Jake. Jake advises Brett to spread the cape, but a quick, disapproving glance from the sword handler tells her it's not what she's expected to do. So instead, Brett carefully folds up the heavy cape and places it on her lap. We gather this is something of an old tradition. This reflects how Romero regards his relationship with Brett. She's a fiercely independent woman with a mind of her own, yet this macho bullfighter insists on treating her like a subordinate.
After Romero has successfully slaughtered yet another bull, he hacks off one of its ears, goes over to where Brett is sitting, and gives it to her personally. The bull's ear, like the matador's cape, is a token of what Romero envisages as a conventional relationship with Brett. But that's not going to happen. Brett is too much of a free spirit to be tied down like that. So it's not surprising that she breaks things off with Romero.
