This means that the 2005 egg production of Iowa was greater than the 2005 egg production of Pennsylvania or we can say that the 2005 egg production of Pennsylvania was less than the 2005 egg production of Iowa. If $x$ represents egg production for Iowa and $y$ represents egg production for Pennsylvania then we can write the inequalities as $x > y$ or $y < x$.
